Handcrafted by Master Cheese makers, this Sharp Provolone is air cured in an aging room for a minimum of seven months to produce the cheese’s characteristic grainy texture and robust flavor. The Mandarini has a pelure applied to the skin of the cheese and is coated with this wax to preserve the rich flavor of the cheese. This technique was taken from old world Italian traditions centuries ago.
